Veggie Jazzed Grilled Chicken

Do you have unexpected guests that need to be fed? Or your family is hungry and you need to whip up something fast for them? This is one recipe that can happen in fifteen minutes or less. 

Now let's get into it

INGREDIENTS 
1 grilled chicken (cut into pieces) 
1 large bell pepper julliened (you can use half of 2 different colors or more 🤷🏾‍♀️)
1 large white onion sliced thin
3 garlic cloves minced 
2 tablespoons oil
Salt to taste
Attarugu aka scotch bonnet (optional) 

Put the oil in a large pot or pan that can hold all your ingredients, heat it up then throw in half of your onions, fry until fragrant then go in with the chicken pieces (with any juice that might have leeched out of it. Put it all in the pan) fry for about 3 minutes until it's hot to touch then add the remaining ingredients (garlic, onions and peppers) mix well then taste for seasoning. If it's okay then perfect. If it's not then you can adjust your seasoning with whatever you like, salt, stock cubes, msg.  

When the veggies start getting soft it's time to turn off the heat and transfer the chicken into a serving bowl or dish. 
You can enjoy it as a side dish or eat it alone. 

 If you like spicy food please feel free to add Attarugu or any hot pepper of your choice to get that zing on your tongue. Personally what I do is make it not spicy (my family is divided on liking spicy food, so most times I just make food 'plain') then add chilli oil or yaji when I'm eating mine.

This is one dish I'd love for you to try. Easy and full of flavor. If you are opportuned try and get wood fire roasted chicken, the woody aroma takes this dish to a new dimension of flavor. Also when getting the chicken get a slightly under cooked bird so that by the time you get it on the fire at home and everything is done it will be perfectly cooked and not overcooked.
