Yam Balls
I love yam in whichever form it is presented to me, pounded yam, porridge, fried yam, boiled yam, roasted yam etc. Now mash yam and add even more deliciousness to it? Count me in x2 please. When I was little this is one of the 2 special dishes my mom used to make me that made my entire week! The other being French toast π
Ingredients
1kg mashed boiled yam
500g beef mince (browned)
3 spring onions (minced)
3 cloves garlic (minced)
Attarugu aka scotch bonnet (to your taste)
Salt
Beef stock powder or cubes ground up
3 large eggs
Neutral Oil for frying
Procedure
1. Add all the ingredients except the eggs into a large bowl and mix well to combine.
2. Taste the mixture for seasoning. Adjust it to your preference.
3. Break in the eggs and mix well until the mixture looks and feels like a chocolate chip cookie dough.
4. Scoop out the mixture with your fingers or a scoop and form into uniform sized balls.
5. Heat your oil up in a heavy bottomed pot then drop in the balls gently and fry until golden brown. Keep the temperature on medium, you don't want the oil too hot so the balls don't brown too quickly and risk burning them. Even though only the eggs are the raw ingredient in the mix you want to cook these gently so the centers get as hot as the outside do.
You should have golden round balls with thin crispy outsides and soft delicious insides that are not loaded up with oil.
You can airfry the yam balls {to my health conscious people}
And that's it for these delicious balls of comfort.
You can serve them plain on their own but when I used to sell them I paired them with a simple green pepper sauce. Let me give you the recipe ☺️ππ½
1 large bell pepper, take the cap off but keep the seeds and the spongy thing holding the seeds.
1 clove of garlic
Salt
2 tablespoons oil
Pinch of msg
A pinch of your favorite curry powder
Blend all of the above in a food processor or liquidiser then cook it in a heated pan until the sauce becomes bright green from a cloudy green. It is so good.

DeleteHello. How long can I store the un fried yam balls in the freezer please?
ReplyDeleteHi, you can store them for up to 3 months I believe. I've never gone beyond 1 month because we finish them all so fast but. If you have constant power and they are placed in airtight containers or even vacuum sealed and frozen they can last really long.
